1 lb salted cod (soak for a day in water)
� cup olive oil
6 med. sized potatoes cut in half
1 onion, sliced thin
2 cloves of finely chopped garlic
2 hard boiled eggs
10 olives
2 tbsp chopped parsley
1 bay leaf
pinch of paprika
Method:
In a large pot, cook cod and potatoes for approx. 30 minutes. Drain, remove bones and skin. Flake cod, slice potato and set aside.
In another pot over medium heat add olive oil, onions, bay leaf, pinch of paprika and garlic. Stir frequently until onions are transparent. Add cod and saut� for approx. 5 minutes. Add potatoes; mix and cook for another 5 minutes. Remove to platter and garnish with parsley, eggs, and olive.
